New Restaurant Has A 'Green' Twist

DENVER (CBS4) ―
Part of an old theatre complex on East Colfax has been being transformed into Denver's newest restaurant and it has a "green" twist.
Encore, located at 2550 East Colfax, is in the same building as the Tattered Cover book store.
Chairs salvaged from the Aspen Ski Corporation and tabletops recycled from old college bleachers were used to furnish the dining area.
"Green is such a catchword, I don't even like to use it," Encore owner Steve Whited said. "But our philosophy in life in general is we really take seriously (the concept of) reduce, reuse, and recycle."
Whited is reusing part of the historic Lowenstein Theatre Complex to create the hip eatery. The old theatre's backstage doors even got a new life. They now provide the entryway to the private dining room.
"The pressure is big. There are a lot of expectations going into this restaurant," bartender Kelly Gregory said.
Whited is so passionate about the environment, he's recycling old cooking oil for fuel and using biodegradable containers for take home orders.
Expect appetizers, like roasted artichoke and truffle butter, to run between $6 and $10. The fancy entrees are less than $30.
Encore is now open to the public.
There are two more spaces that have been leased in the old Lowenstein Theatre. One will go to Colorado Free University and the other to Jersey Mike's Subs.
Music store Twist and Shout opened its doors there more than a year ago.
